如何分辨灌水牛肉和一般牛肉?

農委會畜牧處副處長朱慶誠表示,灌水牛肉和一般牛肉很難用肉眼辨別,屠宰完的肉品屠體若要灌水,需要加壓才行,否則灌不進去,肉裡面含水的樣態多種,包括結合水、游離水和結合水,灌進去的水是游離水,灌進的位置是在肌肉裡,拿起來會滴水。

朱慶誠表示,肉商都會訂定滲水率標準,一般來說,滲水率不得超過4%才合格,若滲水率超過4%,則代表肉品可灌被灌水,或屠宰後的保存條件不佳。
